This one-and-a-half-year full-time course offers comprehensive training in fully-equipped commercial kitchens, where you'll use professional equipment and machinery to create an array of bread, pastries, and cakes. Throughout the course, which spans theoretical knowledge and hands-on practical skills, you'll gain expertise in working within a commercial kitchen. The curriculum covers the planning, preparation, and baking of specialized cakes, desserts, tarts, petit fours, pastries, yeast goods, and chocolates. Additionally, you'll learn essential aspects such as adhering to health and food safety procedures, maintaining kitchen premises, acquiring hospitality industry knowledge, creating cost-effective menus, and preparing food in accordance with dietary and cultural needs. Your training will involve practical, hands-on sessions in the fully operational commercial training kitchens at the Australian Professional Skills Institute in East Perth.
