Certificate II in Cookery (Commercial Cookery Pre-Apprenticeship)

If you'd love a career as a chef, this course can set you up for a head start on an apprenticeship or get you job ready for employment in a commercial kitchen.

This nationally recognised and accredited qualification will give you the job-ready skills that employers are looking for, and could give you a head start to get into a commercial cookery apprenticeship to work in restaurants, hotels, catering operations, clubs, pubs, cafes, and coffee shops; or even in aged care facilities, hospitals, prisons, and schools — anywhere there's a commercial kitchen!

You'll get a great introduction to how the commercial kitchen operates, and learn how to prepare dishes to commercial standard. You'll also gain skills in using food prep equipment, hygiene for handling food, perishable stock control, communicating with kitchen staff, and kitchen safety. 

Completion of this course as a pre-apprenticeship will provide credit towards a relevant higher level qualification, should you wish to pursue further study. It's an excellent pathway to an apprenticeship or traineeship in this industry.

This qualification reflects the role of individuals working in kitchens who use a defined and limited range of food preparation and cookery skills to prepare food and menu items.
They are involved in mainly routine and repetitive tasks and work under direct supervision. This qualification does not meet the requirements for trade recognition as a cook, but can provide a pathway towards achieving that.
This qualification provides a pathway to work in kitchen operations in organisations such as restaurants, hotels, catering operations, clubs, pubs, cafes, and coffee shops; and institutions such as aged care facilities, hospitals, prisons, and schools.
The skills in this qualification must be applied in accordance with Commonwealth and State or Territory legislation, Australian standards and industry codes of practice.
No occupational licensing, certification or specific legislative requirements apply to this qualification at the time of publication.
