With this short course skill set, you’ll learn to safely and skilfully trim a carcase hanging from a retain rail in a modern meat processing facility. Other skills include how to sharpen knives; inspect carcase forequarters and hindquarters; and manage all aspects of the retain rail including pathology and dressing defects. 

This skill set consists of units from nationally recognised and accredited qualifications. Successful completion can provide credit, should you pursue further study in a related qualification.
